Thai Coconut Chicken Soup - Are saturated fats ok now?Thai coconut chicken soup is a scrumptious recipe and yes, there is some saturated fat in it. Coconut fat consists of saturated and monounsaturated fats. It's actually a highly nutritious fat that does NOT elevate your cholesterol. There is nothing harmful in saturated fat as long as you don’t eat it with sugar and you eat only the most unrefined oils. This is one of the biggest myths in a long line of weight loss misunderstandings.Fats don't make you fat. Just 30% of what you eat should be fats and you need to eat the healthiest, least refined fats but it is only when when fats and cane sugar (or any high glycemic sweetener) are eaten together is it a signal for your body to store fat. Thai coconut chicken soup is unbelievably delicious and can be made with diluted coconut milk for those of you who prefer the lighter version. Honestly, even if you use coconut cream it will not cause fat storage and it makes for a richer and quite tasty soup. This is my most favorite Thai recipe I have mastered so far. I am working my way through some simple ones because I am crazy about Thai cooking and I have a new relative from Thailand who is graciously sharing her mother’s best recipes with me.
Not only does coconut fat not raise your blood cholesterol, it increases your metabolism! The coconut palm is ubiquitous in tropical climates and the coconut is a staple food in those cultures. It’s an amazing plant and every part of it, the oil, milk, water and sugar is extremely nourishing. Keep in mind that coconut fat is the easiest fat to digest and it helps you to absorb vitamins and minerals. Essential fatty acids are saturated, monounsaturated and polyunsaturated. All oils and animal fats are a mixture of these. We need them all. The best fats to eat are the unrefined ones, virgin, organic olive and coconut oils and real butter. The polyunsaturated seed and nut oils are good too as long as you buy unrefined oils that need to be refrigerated. These are too fragile to heat at all. The more cooking and food preparation you do the more you are controlling your weight and health. Without good health nothing else works. So it’s well worth the time it takes to learn about the healthiest foods and how to prepare some simple low glycemic recipes to support being slender and having a good life. Thai Coconut Chicken soup is elegant enough for company and so simple to make that you can throw it into your regular repertoire of standby recipes.
