Granulated Fructose Update and Clarification
by: Anonymous

High quality granulated fructose used to be manufactured in the U.S. from apples and pears. Now it seems all packaged fructose sold in health food stores is made only from corn. This apple and pear derived fructose was a reasonable substitute in moderation for people with cane sugar sensitivities. The current cheap trend by manufacturers to offer only inexpensively made fructose from corn is troubling when one considers the problems presented by corn especially now that we are faced with the further health risks present in altered GMO corn. We are not here talking at all about high fructose corn syrup -- another product entirely. We are speaking only of granulated fructose.

Dear Anonymous,

Thank you for this update and clarification. I wonder if the granulated fructose that comes in bulk in natural foods stores is also made from cheap corn. I will inquire at my market and I would suggest that you readers do the same. Regardless, it's probably best to use good quality palm or coconut sugar for baking.
